I tried this dip at my friend's house back in April and forgot all about it until now. It's really good! So good, that I had to stop myself from eating the whole bowl.....eek! It's a perfect dip for tailgating. You can make it ahead of time (gameday morning) and it will be ready to serve in a few hours.
2 plum tomatoes, chopped
1 large ripe avocado - peeled, pitted and chopped
1/4 cup finely chopped red onion
1 clove garlic, minced
1 tablespoon chopped cilantro
1 tablespoon lime juice
1 tablespoon olive oil
1 tablespoon red wine vinegar
4 ounces crumbled feta cheese
salt and pepper to taste
Directions: In a bowl, stir together tomatoes, avocados, onion, and garlic. Mix in cilantro and lime. Gently stir in olive oil and vinegar. Then stir in feta. Cover, and chill for at least an hour. Serve with tortilla.
