Tailgate Recipe: Loaded Sweet Potato Skins



I am big fan of recipes that taste good and that are also good for you. Sweet potatoes are loaded with beta-carotene and vitamin A. These potatoes can be baked ahead of time and then prepared on the grill the day of the tailgate. 

Ingredients:
4-6 large sweet potatoes
1 cup cheddar cheese, shredded
1/2 cup sour cream
3-4 slices cooked bacon, crumbled
Butter
Chives
Salt
Pepper

Directions: Preheat the oven to 400 degrees F. Wash, dry potatoes and pierce the potatoes with a fork. Bake in the oven for 35 to 45 minutes, or until tender and not mushy. Remove from the oven and let cool. Cut the potatoes in half. Scoop out some of the flesh of the potatoes. Season with salt and pepper, and drizzle with melted butter. Place the skins on a baking sheet (or the grill) and cook for about 10 minutes, or until crisp. Top each skin with cheese, sour cream, chives and bacon.
