Ravens Football Shaped Purple Potato Bites






Continuing my theme for Super Bowl, I present "Ravens Purple Potato Bites". I found these great purple potatoes at my local Whole Foods and knew they would be a perfect Ravens themed dish. They are colorful and delicious enough to serve as mashed potatoes but I took it one step further, added blue cheese and turned them into twice-baked potato bites.

Ingredients:
1 small bag purple potatoes
Blue Cheese Crumbles
2 tbl Butter
1/4 cup Cream or Milk
1 tsp Salt
1 tsp Pepper
Parsley
Sour Cream

Directions:
Scrub and wash the potatoes. Cut each potato in half and place in a large pot of water. Cook on high until water starts to boil, then reduce heat to a slow boil. Cook for about 25 minutes or until you can pierce the potatoes with a fork. Remove from heat and drain the water. Transfer potatoes to a mixing bowl, add butter, cream, salt and pepper. Using an electric beater is the easiest way to whip the potatoes.

Once the potatoes are mashed, pre-heat your oven for 350. I used my Wilton football molds but you could make these in any muffin pan as well. Whatever pan you use to bake them, make sure you coat the surface with oil. Start by adding a layer of potatoes, then add a small layer of blue cheese crumbles, finish with another layer of the mashed potatoes. Bake for 20-25 minutes. Garnish with parsley and sour cream.
